Place the butter, honey, apple cider vinegar and fresh garlic in a small glass measuring cup or microwave-safe bowl. Microwave for one minute to melt the butter and mellow the garlic.
In a stand mixer fitted with paddle attachment, whip together the softened cream cheese, mayonnaise, salt and pepper and microwaved butter, garlic, honey and vinegar.
Add the shredded cheddar and pepper jack cheese and the pimentos. Mix again until well combined.
Put the pimento cheese in an airtight container in the refrigerator for about an hour before serving. This way the flavors have a chance to harmonize together.
Serve with celery or other cut vegetables and your favorite crackers. Or spread on your favorite sandwich bread to make tea sandwiches.
