Ingredients

  • 4 oz sharp cheddar cheese shredded
  • 4 oz pepper jack cheese shredded
  • 8 oz cream cheese softened
  • 4 oz pimentos drained
  • 1/3 cup mayonnaise
  • 1 tbsp butter
  • 1 tbsp honey
  • 1 clove garlic minced
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt
  • 1/2 tsp fresh ground black pepper

Instructions

  • Place the butter, honey, apple cider vinegar and fresh garlic in a small glass measuring cup or microwave-safe bowl. Microwave for one minute to melt the butter and mellow the garlic.
  • In a stand mixer fitted with paddle attachment, whip together the softened cream cheese, mayonnaise, salt and pepper and microwaved butter, garlic, honey and vinegar.
  • Add the shredded cheddar and pepper jack cheese and the pimentos. Mix again until well combined.
  • Put the pimento cheese in an airtight container in the refrigerator for about an hour before serving. This way the flavors have a chance to harmonize together.
  • Serve with celery or other cut vegetables and your favorite crackers. Or spread on your favorite sandwich bread to make tea sandwiches.
