Instructions
Preheat oven to 400 degrees F.
Peel and wash the carrots. Cut them into about 1-inch pieces. Cut the thicker pieces into half, lengthwise. Place them in an oven-safe casserole dish.
In a small bowl or glass measuring cup, add the butter, honey, brown sugar, olive oil, garlic, salt and pepper. Microwave on high power for about 40 seconds, until the butter is completely melted. Stir together and pour over the prepared carrots. Stir to coat all the carrots.
Roast the carrots in the dish on the middle rack of the oven for 20 minutes. Use a heat safe spatula to give the carrots a good stir.
Continue roasting the carrots for an additional 20 - 25 minutes, until the carrots are tender. Top with chopped parsley and serve.
