While I could happily chow down on Mexican food several times a week (tacos, tostadas, chips and guacamole, fresh garden salsa… bring it ALL on) I’m not a huge fan of margaritas. They are a one and done drink for me so if I’m going have one, it better be good. And these fresh Watermelon Margaritas are GOOD!

I just returned from a whirlwind blogging trip all about beef (more about that in future posts). So with Cinco de Mayo next week I’m currently dreaming about steak tacos and roasted poblano chimichuri sauce. So I figured I’d better have a pretty spectacular margarita to compliment those tacos (I’ll be sharing that recipe with you soon too).
My local grocery had a huge box of watermelon last week and while it seemed early for watermelon (at least in Ohio) I took a chance and purchased one. And WOW was it tasty! So fresh and incredibly sweet and enormous. So while we ate a ton of it I still had some leftover in the fridge when I got back from my trip. Plenty to make two of these festive and fun watermelon margaritas.
Watermelon Margaritas
Ingredients
- 2 c. fresh watermelon juice from about 4 cups of cubed watermelon
- 1/2 c. tequila
- 1/4 c. fresh lime juice
- 2 T. sugar
- pinch of ground cardamom
- 2 c. ice
Instructions
- Blend the cubed watermelon in a high-powered blender. Pour through a strainer to remove any seeds.
- Add 2 cups of the fresh watermelon juice, 1/2 cup of tequila, 1/4 cup of fresh lime juice, 2 tablespoons of sugar, pinch of cardamom and ice back to the blender. Blend until smooth.
- Pour into two glasses and serve immediately.
