What is your favorite way to cook pork chops? I go back and forth depending on my mood and the weather. I love good grilled pork chops. But slow cooker pork chops are pretty much fool proof. The slow cooker helps to lock in the moisture while cooking so the pork chops come out tender and juicy every time. And the simple sauce made of pure maple syrup and Dijon mustard that I cook these pork chops in is just divine.

How to Cook Slow Cooker Pork Chops:
The key to these pork chops is browning them in a skillet first. The extra few minutes of effort adds extra flavor to the pork. Plus a nicely browned pork chop is just more visually appealing. We eat with our eyes first. After that you just pop them into your slow cooker and it does the rest of the work for you. Easy peasy.

I am a meat and potatoes kind of girl. I serve these pork chops with my recipe for cheesy potatoes and fresh asparagus. Here’s some more side dish suggestions:

Kitchen Tips:
- Purchase thick cut, boneless pork chops for this recipe – at least 1-inch thick.
- I use a 6-quart slow cooker similar to this one to cook these pork chops.
- Be sure to use pure maple syrup for this recipe, not pancake syrup that contains corn syrup.

Slow Cooker Pork Chops
Ingredients
- 4 boneless loin pork chops mine were 1.5 inches thick
- 1 tbsp vegetable oil
- 1/4 cup beer or chicken broth
- 2 tbsp Dijon mustard
- 2 tbsp pure maple syrup
- 1 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat a large, non stick skillet over medium high heat. Add a tablespoon of vegetable oil to the pan to prevent sticking. Add the chops and brown each chop, about 5 minutes per side.
- Place the chops into a slow cooker set on low.
- Return the skillet to the heat and add the beer (I used a pale ale) to scrape up the browned bits from the bottom of the skillet. If you don't like cooking with beer, use chicken broth.
- Whisk together the Dijon mustard, maple syrup and salt. Add it to the hot skillet and let it simmer for one minute.
- Pour the sauce over the pork chops in the slow cooker and cook on low heat for 5 - 6 hours.
- Serve the pork chops with the sauce in the slow cooker.

I love pork chops but they can be a little dry if cooked too quickly; I love the idea of letting them cook away for hours in the slow cooker.
