The best chicken noodle soup is homemade. You could make it completely from scratch with a whole chicken and homemade stock. Anymore with our busy schedules, I see that as a lot of hassle. And honestly my recipe that uses help from frozen vegetables and grocery store rotisserie chicken is just as good. This healthy soup is ready in a fraction of the cooking time! Easy rotisserie chicken noodle soup is a delicious meal for any night of the week, especially during soup season.

- The vegetables all come from the frozen food section which is a great way to save time on preparation. No chopping but a soup that is still loaded with veggies.
- I amp up the flavor with Dijon mustard and a generous amount of seasonings – Italian blend, salt and pepper and fresh parsley.
- The soup starts with a roux – butter and flour which both adds flavor and helps to make the broth extra creamy.
- Sour cream is stirred in at the end to provide even more flavor and a silky texture to the soup which makes it so comforting. This is a bowl of soup you’ll be excited to tuck into.
Ingredients for rotisserie chicken soup
- Butter – I always start soup with some fat, either butter or olive oil. In this case, the butter and flour combine to make a roux which adds flavor and creamy texture.
- Flour – I like Wondra flour because of its fine texture, which means no lumps.
- Seasonings – Generous seasoning is what takes a good soup and makes it great. This one uses a combination of dried Italian seasoning, salt and black pepper.
- Garlic – Use fresh garlic here to amp up the flavor profile of the broth.
- Dijon Mustard – Adds a zingy flavor that blends in well with the other flavors, giving it “secret ingredient” status.
- Frozen Vegetables – Saves so much time but doesn’t sacrifice flavor. This soup uses frozen mirepoix ( a blend of carrots, onion and celery), cut green beans (bite size) and corn. This soup is a sneaky way to get some veggies in the bellies of your picky eaters.
- Shredded Chicken – Rotisserie chicken is my favorite store-bought short cut. This soup is great for when you leftover roast chicken too. The recipe calls for three cups of shredded, cooked chicken meat.
- Chicken Broth – Use the best quality chicken stock or chicken broth. The recipe calls for six cups of broth.
- Noodles – Use your favorite brand of egg noodles. They can be wide egg noodles or smaller, it’s up to you.
- Sour Cream – My favorite way to make a creamy sauce is to stir in some sour cream at the end. So simple.
- Parsley – I love the color and fresh flavor some fresh parsley adds. You could use other fresh herbs, like thyme or chives.
Instructions
In a 6-quart stock pot over medium high heat melt the butter. Add the flour and cook, stirring often until starting to brown. Add the bag of frozen mirepoix and cook for a couple of minutes. Then add the garlic and Dijon mustard, cooking for about a minute until the garlic is fragrant. Stir in the seasonings, green beans, corn and chicken. Then pour in the chicken broth. Cover the pot and bring it to a boil. Add the noodles. Cook for about 8 minutes, stirring occasionally, until the noodles are tender (al dente). Lower the heat and stir in the sour cream and parsley. Keep the soup warm on the stove top until ready to serve.

Serving suggestions
The simplest way to serve this homemade chicken noodle soup is with some multigrain crusty bread and sliced apples. If you want to go to a little more effort, here’s some of my recipes to make this soup into a complete meal –
Storage directions
Store the soup in an airtight container in the refrigerator for 2-3 days. Reheat the soup as needed in the microwave or in a clean saucepan on the stovetop. You could freeze the soup, but the noodles won’t freeze well. They’ll get mushy. Just beware.

One Pot Creamy Rotisserie Chicken Noodle Soup

- 1 6-quart stock pot
Ingredients
- 3 tbsp butter
- 3 tbsp Wondra flour
- 12 oz frozen mirepoix
- 4 cloves garlic minced
- 2 tbsp Dijon mustard
- 2 tsp Italian seasoning
- 2 tsp salt
- 1 tsp black pepper
- 1 cup frozen cut green beans
- 1 cup frozen corn
- 3 cups rotisserie chicken
- 6 cups chicken broth
- 3 cups egg noodles
- 1 cup sour cream
- 1/4 cup fresh parsley chopped
Instructions
- In a 6-quart stock pot over medium-high heat, melt the butter.
- Add the flour and cook, stirring often, until the flour is starting to brown.
- Add the bag of frozen mirepoix and stir well.
- Add the garlic and Dijon mustard and cook for about a minute until the garlic is fragrant.
- Add the seasonings, green beans, corn and chicken. Stir well to combine. The mixture will be very thick.
- Carefully pour in the chicken broth and mix well.
- Cover the pot. Stir occasionally until the soup is boiling.
- Add the noodles. Cook, stirring occasionally for about 8 minutes, or until the noodles are tender.
- Turn the heat to low. Stir in the sour cream and chopped parsley.
- Keep the soup warm on the stovetop until ready to serve.
