If you camp, you are likely familiar with hobo dinner foil packets. I’m kind of over camping myself. I like a comfy bed and indoor plumbing at the ready in the middle of the night. But both my kids are in Scouting and they do seem to enjoy camping. This meal is something we can all agree on. My foil packets are a bit different than many I see. I like the flavors of butter and garlic with beef. So I use dry Italian dressing mix, bottled Italian dressing, butter and fresh garlic to flavor my hobo dinners. And to really dress things up, I add some Provolone cheese and fresh parsley at the end. For my football-playing son, I serve these dinners with macaroni and cheese. For my daughter and I, the packet is plenty of food.

How to make a Hobo Dinner in the Oven
I currently don’t own a grill. So the oven is the way to go for me with these dinners. Assemble the foil packets and place them on a sheet pan. Then bake them in a 375 degree oven for about 45 – 50 minutes. Or until the temperature of the ground beef patty reaches 160 degrees F. And the potatoes and carrots are fork tender. At the end, open each foil packet and top the beef with a slice of cheese. Return to the oven just until the cheese is melted. Then top each dinner with some fresh parsley.
How to make a Hobo Dinner on the Grill
I recommend not grilling these foil packets over direct heat. Indirect heat is the way to go to ensure the potatoes and carrots are cooked evenly. Grill the foil packets over indirect or medium-low heat for about 40 – 45 minutes. Again, you want the beef to be cooked to a safe eating temperature of 160 degrees F. And you want the potatoes and carrots to be fork tender.
Putting together a Foil Packet
Use heavy duty foil to avoid ripping. Make a rectangle, about 24 inches in length for each packet. Layer the potatoes, carrots and green beans on the bottom. Drizzle the Italian dressing over the veggies. Mix the beef together with the garlic and dry Italian seasoning. Form the ground beef into four patties. Place a patty on top of the veggies for each foil packet. Top each portion of ground beef with a pat of butter. Pull the long sides of the foil together and roll down to close. Then roll up the ends to seal shut.

Hobo Dinner Foil Packets
Ingredients
- 1 pound ground beef
- 1 envelope Good Seasons Italian Dressing Mix or similar brand
- 2 cloves garlic minced
- 1/2 tsp salt
- 2 tbsp butter 4 slices
- 6 medium Yukon Gold potatoes cubed
- 4 medium carrots peeled and sliced
- 2 cups frozen green beans
- 1/2 cup Newman's Own Italian Dressing or similar brand
- 4 slices Provolone cheese
- chopped fresh Parsley
Instructions
- Preheat oven to 375 degrees F.
- In a bowl, mix together the ground beef with the Italian dressing mix, garlic and salt. Form into four patties.
- Make four large rectangles of foil. On each sheet of foil divide the potatoes, carrots and green beans - making an even pile of each. Top each pile of veggies with 2 tablespoons of bottled Italian dressing.
- Place a seasoned hamburger patty on top of each pile of veggies. Top each patty with a slice of butter. Fold up the foil to seal the packets.
- Place the packets on a baking sheet. Bake until the potatoes and carrots are tender and the ground beef is 160 degrees F.
- Unwrap the packets. Top each ground beef patty with a slice of Provolone cheese. Return the packets to the oven for a minute or so to melt the cheese. Top each packet with fresh parsley. Serve.
