Healthy Shepherd’s Pie is pure comfort food, incredibly satisfying but uses ground turkey, lots of veggies and mashed cauliflower.
This meal has been added to my weekly dinner rotation. Feeding two teenagers who are on the go constantly is a challenge. My son and daughter don’t usually agree on foods they’ll eat either. Plus I want to get some lean protein and veggies into their diets whenever possible. This Healthy Shepherd’s Pie accomplishes all of my goals. And it uses help from the refrigerated and frozen section at the grocery to get it on the table quickly! This is most definitely not an authentic Shepherd’s Pie recipe. But it is delicious comfort food that makes everyone in my house happy.

How to make Healthy Shepherd’s Pie

Add a bag of frozen mixed vegetables and about 2 cups of pasta sauce. Stir to combine. Add a couple of tablespoons of Worcestershire sauce, and 1/2 teaspoon each of salt and pepper. Allow to heat until simmering.
Spread the turkey mixture evenly into a glass baking dish and set aside. Heat both the mashed potatoes and mashed cauliflower according to package directions. Combine them in a bowl with 1/2 cup of the whipped cream cheese. Mix until smooth.
Spread the potato and cauliflower mixture evenly over the top of the turkey mixture. Top the potatoes with about 1/2 cup of shedded mozzarella cheese. Bake the Healthy Shepherd’s Pie in a 400 degree F oven for about 30 minutes, or until the cheese is browning on top and the mixture underneath is bubbling. Sprinkle the top with fresh parsley before serving.
