When thinking about a recipe to create with the Cacao Bliss, I pretty easily landed on truffles. I remembered back when I was feeding baby food to my son. I used to call baby food prunes “chocolate fruit”. Dried prunes seemed like an obvious choice to mix with the Cacao Bliss to create a healthy chocolate truffle.
Why this recipe works
I was honestly amazed at how well this recipe works! A food processor is necessary for this recipe. I used it to grind both the freeze dried raspberries and pistachios first. These are optional ingredients. But especially at the holidays, they provide such a festive coloring to the finished truffles. These truffle treats have a deep, dark chocolate flavor.
The truffles have a sticky consistency. So they need to be coated with something – be it more Cacao Bliss powder, or your choice of ground nuts, coconut or other freeze-dried fruit.
The food processor makes quick work of combining the dried prunes and chocolatey Cacao Bliss powder into a smooth ball. After chilling for a bit in the fridge, roll into small truffle balls. Coat as desired. And then give as gifts or indulge in them yourself at home.
Ingredients for healthy chocolate truffles
- Earth Echo Foods Cacao Bliss – This Superfood Elixir Blend can be added to your daily routine in smoothies, hot drinks, and delicious desserts like these Healthy Chocolate Truffles.
- Dried Prunes – Prunes are an excellent source of vitamins, minerals, fiber and antioxidants. Use one 8-ounce pouch for each batch of truffles. I prefer this brand.
- Freeze Dried Raspberries – Grind them in your food processor to make a pretty pink coating for your truffles.
- Pistachios – Use a no shells, roasted and salted variety like these.
Instructions for making healthy chocolate truffles
- If using, grind the freeze dried raspberries in your food processor. Place them in a shallow bowl. Rinse your food processor bowl before continuing.
- If using, grind the pistachios in your food processor. Place them in a shallow bowl. Again, rinse your food processor bowl before continuing.
- Add one 8-ounce pouch of dried prunes to your clean food processor.
- Add 8 scoops (or about 3/4 cup) of the Earth Echo Foods Cacao Bliss powder to the food processor.
- Close and mix on low until the prunes and cacao bliss have completely combined into a neat ball.
- Transfer the chocolate dough mixture to a small bowl and refrigerate for about 30 minutes.
- Use a spoon or small cookie scoop to divide the mixture evenly.
- Lightly roll the mixture into about 16-18 truffles.
- Coat each truffle in the freeze dried raspberries, pistachios or more of the Cacao Bliss.
Pro Tips
- The truffle mixture is easier to work with when cold. The warmer it gets, the more it will stick to your hands and be messy.
- Wear food prep gloves like these when you are rolling the truffles to help contain the mess.
- A small cookie scoop is helpful to divide the mixture evenly.

Ingredients
- 8 oz dried prunes
- 3/4 cup Earth Echo Foods Cacao Bliss
- freeze dried raspberries
- pistachios
Instructions
- To an 8-cup capacity food processor, add both the dried prunes and Cacao Bliss.
- Blend on low speed until the mixture comes together into a smooth ball. Stop and pulse a few times if necessary.
- Transfer the mixture to a clean bowl, cover and refrigerate for about 30 minutes.
- Use a small cookie scoop or spoon and divide the mixture evenly into small balls.
- Roll each ball between your hands until they are smooth to form the truffles.
- Coat each truffle - roll in ground freeze dried raspberries, finely chopped pistachios or more Cacao Bliss.
- Store the truffles in an airtight container in the refrigerator for up to one week or the freezer for up to one month.
