My easy glazed carrots recipe is a great side dish for holiday dinners or an easy weeknight meal. The beautiful glaze is a mix of butter, olive oil, honey, brown sugar, garlic, salt and pepper. It’s microwaved to melt so that it evenly coats the carrots before roasting them to tender perfection in the oven. There’s nothing like roasting fresh carrots. Just look at that color! Canned or frozen cannot begin to compare. This easy carrot side dish is absolutely worth a few extra minutes of prep time!

Ingredients for glazed carrot recipes
- Carrots – I prefer to use a 2-lb bag of large carrots for this recipe. As long as you use 2 pounds of carrots, you could also use baby carrots to save time on cutting and peeling. Or you could use a bag of rainbow carrots.
- Butter – A couple of tablespoons of melted butter adds delicious flavor and also helps to blend all of the sticky glaze ingredients together.
- Light Brown Sugar – It doesn’t take much sugar because the roasted carrots naturally have a perfect amount of sweetness.
- Honey – Honey glaze is perfect for roasted carrots – the two pair so well together. You could substitute with maple syrup, but I prefer honey.
- Olive Oil – A mix of butter and oil helps keep the carrots from burning while they are roasting.
- Garlic – The fresh garlic in the glaze smells amazing as the carrots are roasting!
- Salt and Black Pepper
- Parsley – For garnish after roasting.
Instructions
Wash, peel and cut the carrots. Mix together the glaze ingredients. Microwave so the butter melts. Pour the glaze over the carrots. Roast in the oven at 400 degrees F for 40 – 45 minutes, or until the carrots are have a perfectly tender texture. Make sure to give the carrots a good stir halfway through roasting time.

Pro tips
- I like using a toothpick to test the carrots at the end of roasting to see if they are tender.
- Use a paring knife to cut off the top and bottoms of the carrots before peeling.
- Cut the thicker end (the top) of the carrots in half after cutting into 1-inch pieces so they roast evenly.
- I microwave the glaze before tossing it with the carrots to melt butter and make the brown sugar mixture coat the carrots evenly.

Storage directions
Store the glazed carrots in an airtight container in the refrigerator for up to three days. Reheat in the microwave.

Glazed Carrots
Ingredients
- 2 lbs carrots peeled and cut into about 1-inch pieces
- 2 tbsp butter
- 2 tbsp honey
- 2 tbsp brown sugar
- 1 tbsp olive oil
- 1 clove garlic minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley chopped
Instructions
- Preheat oven to 400 degrees F.
- Peel and wash the carrots. Cut them into about 1-inch pieces. Cut the thicker pieces into half, lengthwise. Place them in an oven-safe casserole dish.
- In a small bowl or glass measuring cup, add the butter, honey, brown sugar, olive oil, garlic, salt and pepper. Microwave on high power for about 40 seconds, until the butter is completely melted. Stir together and pour over the prepared carrots. Stir to coat all the carrots.
- Roast the carrots in the dish on the middle rack of the oven for 20 minutes. Use a heat safe spatula to give the carrots a good stir.
- Continue roasting the carrots for an additional 20 - 25 minutes, until the carrots are tender. Top with chopped parsley and serve.
