Cucumber Bruschetta is a mix of fresh cucumbers, pickles, red pepper, onion and dill that is so simple to make and sure to be a crowd pleaser.
I love running into food at an event that is new and fresh and ready for me to remake into a recipe for you! I attended a graduation celebration recently at my local Sam Adams Tap Room and they served the most delicious cucumber bruschetta. Or maybe it should be called pickle bruschetta? I really couldn’t decide. It was a fresh mix of cucumber and pickles atop a cream cheese spread on top of toasted rye bread. We enjoyed it more than the other appetizers – so much so that I had to make it my own and publish it here.

What is Cucumber Bruschetta?
There are three parts to this cucumber bruschetta: toasted baguette slices, flavored cream cheese and a mix of fresh veggies. The vegetable mix is probably the most crucial part of this culinary creation. I highly recommend seeking out the freshest pickles from the refrigerated section of your grocery store. A combination of pickled cucumbers and fresh cucumbers are what make this bruschetta amazing.
Is Cucumber Bruschetta Healthy?
As far as appetizers go, this is definitely one of the more healthy offerings. The fresh topping with two types of cucumber is very low in calories. A small smear of the cream cheese spread is all that is needed for each serving of bruschetta. This is a fresh, healthy and delicious appetizer to make!

- Panera Bread makes my favorite baguette for slicing and toasting.
- Use a sheet pan similar to this one for toasting your baguette slices.
- I always line my sheet pan with parchment paper to prevent sticking and make clean-up a breeze.

Cucumber Bruschetta
Ingredients
- 1 French baguette sliced and toasted
- 8 oz cream cheese
- 2 tbsp dill pickle juice
- 1 tbsp fresh dill finely chopped
- 1/2 English cucumber chopped
- 1/2 cup dill pickles finely chopped
- 1/3 cup red pepper finely chopped
- 1/4 cup red onion finely chopped
- 1 tbsp dill pickle juice
- 1 tbsp olive oil
- 1 tbsp fresh dill finely chopped
- 2 tsp sugar
- 1 tsp salt
Instructions
- With a hand or stand mixer, whip together the cream cheese, 1 tablespoon of pickle juice and 1 tablespoon of dill. Place in bowl and cover until ready to use.
- In a clean bowl, mix together the fresh cucumber, pickles, red pepper, red onion, 2 tablespoons of pickle juice, olive oil, remaining tablespoon of dill, sugar and salt. Allow to marinate for at least one hour before serving.
- To serve, spread some of the cream cheese on the toasted baguette slices and top with the cucumber pickle mixture.
