This post contains zero medical advice because I’m not a doctor. But I am currently menopausal and trying my best to age gracefully. So I’m reading up on all sorts of supplements. I am really excited to start including collagen in my daily routine. My joints have been so achy in this past year. I’m increasing my protein intake to combat muscle loss that comes with aging. And my skin care routine has gotten a major overhaul recently. Collagen is supposed to help with all these concerns!
So when Earth Echo Foods reached out and asked if I’d like to develop a recipe with their Multi-Collagen Peptides unflavored powder, I jumped at the chance. I’m so excited about these collagen popsicles! Each one contains a full serving of collagen. They are a really fun way to add some collagen peptides to your day. And they are perfect for your upcoming Fourth of July celebrations. I decided to make them look like “Bomb Pops” – using frozen raspberries and blueberries and vanilla Greek yogurt.

Ingredients for collagen popsicles
- Earth Echo Multi Collagen Peptides – One serving of Earth Echo’s collagen powder is one tablespoon. Each of my popsicles contains one full tablespoon of collagen. So one popsicle provides one daily dose of collagen.
- Frozen Blueberries – I’m using blueberries to make red, white and blue popsicles. No added sugar is required.
- Frozen Raspberries – I thought raspberries would give the best red color and good flavor.
- Vanilla Yogurt – I used a Greek low-fat vanilla yogurt in my popsicles for even more protein. Feel free to use your own favorite brand and variety of vanilla or even plain yogurt.
- Variations – You can mix and match your own favorite fruits when making these popsicles. They don’t have to be red, white and blue. Other good choices would be frozen peaches, mango or cherries.
Instructions
Measure one cup of each – the frozen blueberries and frozen raspberries. Microwave each of the frozen fruit for about 2 minutes. Use a whisk or fork to mash the berries. Stir three tablespoons of the Earth Echo Multi Collagen Peptide powder into the microwaved raspberries and the microwaved blueberries.
Use a small spoon to fill each popsicle mold 1/3 of the way full with the blueberry and collagen mixture. Top that with a layer of vanilla Greek yogurt. And then top that with the raspberry and collagen mixture. Place the tops on the popsicles and freeze for at least 4 hours or overnight.
