As Thanksgiving draws near I’m less thinking about what food I’m going to fix and more on bigger household issues. Things seem to happen all at once, don’t they? In a week our dryer decided to form vicious “teeth” on its drum and shredded a bunch of clothes. It was old enough that a whole new drum was not an option. And then my husband’s truck died on the way to work. Not one day, but two days in a row. We have a new washer and dryer now but the jury is still out on the fate of his truck. Not exactly pleasant things to deal with anytime but especially right before the holidays and things are extra busy anyway.

So today I’m bringing you a breakfast for dinner recipe that is so easy it really doesn’t even qualify as a recipe. I’ll have plenty of Thanksgiving recipes to share with you in the next week or so but those don’t feed a family on a Tuesday night.
I’ll be honest, when I’m pressed for time I pick up something quick and easy at Target. If I’m there anyway it makes me still feel like I’m feeding my family with something that took some thought besides just driving through a fast food line. Do you do this? Please tell me I’m not alone!
MorningStar Farms Spicy Black Bean Veggie Burgers are a hearty vegetarian option but if you’ve read my blog long enough you know we’re not vegetarians! But we love beans too and these black bean burgers are just right tucked into a burrito with a fresh-cooked egg and topped with some chopped avocado, cheese, salsa and sour cream. It’s a dinner we ALL can appreciate! So satisfying and it takes no time at all.
Breakfast burritos have long been a staple in our household for a quick weeknight meal. What are some of your favorite go-to meals when you don’t have time to cook “for real”?
Black Bean Burger Breakfast Burritos
Ingredients
- 1 box MorningStar Farms Spicy Black Bean Veggie Burgers
- 4 flour tortillas
- 4 eggs
- 1 c. colby jack cheese shredded
- 1/2 avocado diced
- 4 T. salsa
- 4 T. sour cream
Instructions
- Cook eggs your favorite way, sunny side up or scrambled.
- Microwave the MorningStar Farms Spicy Black Bean Veggie Burgers according to package directions.
- Place one black bean burger on top of each tortilla. Top each burrito with one egg. Top each burrito with cheese, avocado, salsa and sour cream. Fold up and serve immediately.

Breakfast burritos are one of my most favorite things, but I’ve never had one like this! Such a great way to use the black bean burgers. And I always use scrambled eggs in my breakfast burrito…but I’m going to try it with a fried egg next time. #client
