I am horrible at gardening. I can cook food all day long. But someone else needs to grow it for me. Even though I’ve never grown a ginormous zucchini, I know plenty of people who have. I always end up with an abundance of zucchini by the end of summer – from friends, family or the farmer’s market. I recently started fixing zucchini in my air fryer and I’m hooked. You will be too.

How to make Air Fryer Zucchini
The air fryer does all the work to make fresh zucchini tender and delicious. Slice some zucchini. Toss it with a little vegetable oil and seasonings. I like using red pepper flakes, garlic powder and salt. You can skip the red pepper if you don’t like spicy food.
Air fry the zucchini at 375 degrees F for 8 – 11 minutes. The range is because of a couple of factors. Your brand of air fryer. And how tender you want the zucchini to be. I like mine to melt in my mouth, so I cook it a bit longer.

How to serve Air Fryer Zucchini
A simple drizzle of fresh lemon juice after it comes out of the air fryer is good. I like serving mine with some cheese on top – feta and fresh mozzarella are good choices. Or mix the air fryer zucchini with some jarred pasta sauce. Serve it over some pasta or cauliflower rice and you have a complete meal! Also, I realized after snapping the photos that my tiny mozzarella cheese balls kind of look like marshmallows. Which would be really weird. I promise it’s cheese.

Air Fryer Zucchini
Equipment
- Air Fryer
Ingredients
- 2 or 3 small zucchini
- 1 tbsp vegetable oil
- 1/2 tsp red pepper flakes
- 1/2 tsp garlic powder
- 1/2 tsp salt
Instructions
- Wash and slice the zucchini into about 1/3-inch slices.
- In a clean bowl, toss the sliced zucchini with the vegetable oil, red pepper flakes, garlic powder and salt. The red pepper is optional.
- Place the zucchini slices in a single layer in the basket of your air fryer.
- Air fryer the zucchini at 375 degrees F for 8 - 11 minutes. There's no need to stir or toss the zucchini in the middle of cooking.
- Top with fresh lemon juice. Or pasta sauce and cheese to serve.
