I’m not sure why it took me so long to try cooking spaghetti squash in my air fryer. I had terrific results cooking acorn squash in it two years ago. It’s turned into on of my most popular air fryer recipes! Now I have a new side dish to add to my rotation of meals. My favorite way to serve air fryer spaghetti squash is simple. A little butter, lemon juice, fresh herbs, salt and pepper. The air fryer really works magic on this squash.

The air fryer roasts spaghetti squash to perfection, tender and flavorful, but not “wet”, which is a common problem when cooking fresh squash.
How to choose a Spaghetti Squash
- Make sure it is a pretty yellow color and not pale or lacking in color.
- Choose a squash that will fit in the basket of your air fryer, one probably not weighing more than two pounds.
- The spaghetti squash should be firm and feel heavy for its size. Don’t choose one with any soft spots.
How to make Air Fryer Spaghetti Squash
- Wash and dry the squash
- Using a sharp, heavy chef’s knife carefully cut the squash in half from the stem to the bottom
- Trim off a bit of the top and bottom so the halves fit into your air fryer basket
- Use a large spoon to scrape out and discard the seeds and strands of squash attaching the seeds to the middle
- Place the squash halves, cut side down into the basket of your air fryer
- Air fry the squash at 325 degrees F for about 15 minutes
- Turn the squash halves over so they are cut side up
- Brush the insides of the squash with melted butter (using a pastry brush) and sprinkle lightly with salt
- Air fry the squash again at 375 degrees F for 12 – 15 minutes, or until the squash is tender
- Shred the squash with a fork before serving
Serving suggestions for Air Fryer Spaghetti Squash
- Top it with lemon juice and fresh chopped herbs
- Drizzle spaghetti sauce on top and sprinkle with mozzarella cheese, then stick it back in the air fryer for a few minutes to melt the cheese
