So what is your reaction reading the title of this post? Blueberry Kale Breakfast Salad. Plenty of people add handfuls of kale to their breakfast smoothies. And that’s a good way of getting your greens early in the day. But this salad is truly great! Simple to assemble, deliciously sweet and crunchy and incredibly satisfying. I know green smoothies are extremely popular and I’ve tried them a few times with my high-powered blender but I still taste the “green”. Which is fine, really it is. But I’d rather eat my greens in a salad than slurp them through a straw. Personal opinion only. Can anyone else relate?
Grains in a salad aren’t a new thing but cereal might be. But it makes total sense with Great Grains Blueberry Morning cereal. It provides a fast way of adding whole grains, real fruit and crunchy nuts (with the perfect amount of natural sweetness) to this beautiful salad. I actually used to eat the Blueberry Morning on a regular basis. It was one of my very few brands of favorite cereal until one day it disappeared from the shelves. So when I found out it had returned I was genuinely excited to create a recipe with it.
My salad is simple but big on flavor. Baby kale is massaged with a little fresh lemon juice and then tossed with Great Grains Blueberry Morning cereal. I added plenty of fresh blueberries to the mix (to compliment the generous amount of dried blueberries in the cereal). And the dressing is simply plain Greek yogurt, honey, lemon juice and a pinch of salt. So nutritious and delicious!

Blueberry Kale Breakfast Salad
Ingredients
- 2 c. baby Kale
- 3/4 c. Post Blueberry Morning cereal
- 1/4 c. fresh blueberries
- 1/4 c. plain Greek yogurt
- 1 T. fresh lemon juice divided
- 1 T. honey
- pinch of salt
Instructions
- Place the kale and 1 teaspoon of the lemon juice in a bowl. Gently massage the kale between your fingers until it is starting to wilt.
- Add the cereal and toss to combine.
- Top the breakfast salad with the blueberries.
- Whisk together the yogurt, remaining 2 teaspoons of lemon juice, honey and salt for the dressing.
- Drizzle the dressing over the salad and enjoy.
