I am so excited about the football themed collaboration I am part of this season, put together by Susannah from Feast + West and Erin from The Speckled Palate. They’ve got bloggers representing each and every one of the NFL teams and we’re going to be bringing you three different football influenced recipes throughout the season, starting with our favorite tailgating recipes. Counting my Cincinnati Nachos we’ve got 64 recipes perfect for all your tailgating needs. Be sure to pin this post and reference it often throughout the entire football season all the way to the Super Bowl.
I can’t live in Cincinnati and not mention our chili at some point. It’s unique for sure with seasonings like cocoa powder and cinnamon (depending on which chili restaurant you visit). We sell our chili in cans but it’s not available all across the country so you can mimic our chili’s unique flavor at home with this recipe. The chili meat cooks quickly and then it’s just a matter of layering nacho chips with it. Kidney beans, mild cheddar cheese and pickled jalapenos round out these nachos. And a quick trip under the broiler gets the cheese all melty and the chips extra crunchy.
Seriously I am so excited about these nachos. I think you’ll really enjoy their unique flavor. And I’m also really looking forward to the Cincinnati Bengals upcoming season. Our QB Andy Dalton had to sit out the end of last season with a broken thumb. I’m hoping for a healthy Andy, a healthy team and finally…. FINALLY a trip past the first round of the playoffs! It’s been a long time coming. WHO DEY!
Cincinnati Nachos
Ingredients
- 1 lb ground sirloin
- 1 small white onion peeled and diced
- 1 tbsp chili powder
- 2 tsp cocoa powder
- 2 tsp light brown sugar
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp oregano
- 1/2 tsp cinnamon
- 1/4 tsp all spice
- 1 15 oz can tomato sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp hot sauce
- 1 bag corn tortilla chips
- 8 oz mild cheddar cheese shredded
- 1/2 cup light red kidney beans drained
- 1/4 cup pickled jalapeños drained
Instructions
- Heat your broiler on low setting with the rack in the upper third of the oven. Line a large sheet pan with parchment paper and spread the tortilla chips evenly on top of the paper.
- In a large non-stick skillet over medium-high heat, brown the ground sirloin and onion. Add all the seasonings, tomato sauce, worcestershire sauce and hot sauce. Stir well to combine and simmer for 8 - 10 minutes.
- Top the corn chips with the Cincinnati-style beef chili. Top with the kidney beans. Sprinkle the shredded cheese evenly over the top.
- Broil the nachos on low setting just until the cheese is melted. Top with jalapeño slices and serve immediately.
